This salad is really quick to put together. All you need to do is cook the barley.
After which you can mix it together with anything you like! Today I had mine with dried cranberries, turkey breast and some super amazing organic cherry tomatoes. They are so sweet it’s crazy. Cherry tomatoes are almost always sweet but these are like 5 times sweeter.
When you’re satisfied with what you have, dress it with some olive oil and red wine vinegar. Season with salt and pepper then EAT.
This if you’re wondering is my mum’s Beetroot and Pear salad. It’s a good way to eat beetroot raw because the sweetness of the pear along with the lemon juice masks the earthy taste of the beetroot. Very simple to make too.
I don’t think there’s an exact amount of beetroot and pear you need. Just cut your preferred amount into thin sticks. For the dressing it’s just olive oil and lemon juice in a 3:1 ratio.
